The history of rum starts in the Caribbean around the 17th century. Cooking with Rum talks about the history and influence of rum on the Caribbean, its culture and its cuisine.
Various rums will be present for tasting and flavoring the foods. Since we are on Antigua, we will start with the island award winning 5-year old English Harbor rum and then move on to three other superb brands from countries such as Barbados, Guatemala, Cuba, Jamaica and Martinique.
The food will introduce our guests to how various rums can be used to flavor foods whether you are using a classic dark rum or a filtered white.
Take this class not just to explore new flavours, but to enjoy the experience of cooking with new friends in a West Indian home with great view of the Caribbean Sea!
Nicole's Table - From the Sea
“What did the fisherman bring?” is always the question the morning of a seafood class, This means that the menu is determined by what's available from the local fishermen. Whether it is Mahi Mahi, snapper, tuna or grouper, a delicious lunch using a local fish will be the end result.
In From the Sea, Nicole introduces you to a variety of ways in which seafood is prepared in the islands. You can have a stuffed whole fish, filet, or even Peleau (a dish that has as many personalities as islands in the Caribbean).
Be prepared for a menu that adjusts from the one listed based on what’s fresh and off the boats. But also be prepared to have fun as we adapt, create, and enjoy what we prepare and eat!

What makes this experience special is the opportunity to explore Antigua’s beautiful coastline using the SeaNXT jet sea scooter, a powerful and easy-to-use device that allows you to glide effortlessly across the water and explore more of the reef with minimal effort. Unlike traditional snorkeling, the SeaNXT’s jet propulsion lets you cruise comfortably along the surface while observing marine life below, with the option to dip underwater for short rides when you feel adventurous.

As the boat carries a maximum of only 6 passengers, it means that you are getting one on one attention guided by an experienced captain. We are able to explore lots of snorkeling spots and get into the little beaches which other boats cannot. Enjoy local snacks and drinks.

Shirley Heights is a restored military lookout and gun battery. The Lookout is a high point (about 490 ft.) that affords a superb view of English and Falmouth Harbours, the best view in Antigua. In this fantastic place every Thursday and Sunday at sunset you will have the opportunity to attend 2 typical Caribbean concerts: the first of calypso music and the second of mixed songs interpreted in a reggae key. At the Shirley Heights bar you can taste the best cocktails in all of Antigua, including the Rum Punch. The photo you can take at sunset will be an indelible memory of your holiday and this day.
